Instinctively curious, he is always on the lookout for the latest culinary trends to offer you an inventive cuisine, full of passion and improvisation. His numerous trips to France, from Champtoceaux in the valley of Loire to the region of Alsace and Saint-Émilion, have given him the opportunity to incorporate the best culinary traditions to his creations.
His journey is vast. With about 15 years of experience in multiple restaurants in Québec and France and in some reknowned hotels, such as Fairmont Château Montebello, Fairmont Tremblant and Grand Lodge Mont-Tremblant, Jean-Luc has distinguish himself while he worked at Restaurant La Quintessence. Thanks to his creative cuisine, Quintessence has been able to preserve the prestigious Quatre Diamants awarded by CAA and AAA.
In his menus, he demonstrates and shares his love for Québec’s finests products, his appreciation for ginger, star anise, time, mapple syrup and, especially, his weakness for local cheeses. His culinary creations will definetely please you…
On June 17, the Bistro à Champlain proudly moved to Estérel Resort. A transition that took months to prepare in order receive the precious wine bottles collectionned by Champlain Charest the last years. Estérel Resort is proud to announce its acquisition of one of Quebec’s treasures: the wine collection from the Bistro à Champlain, which contains more than 5000 bottles. Estérel is honored to be carrying on the legacy of this iconic winery.
